easy, Lentil Coconut Curry
I made this recipe up one day out of the contents of my cupboard. It is the most delicious, and most easy Indian curry ever, and I love it. In the past 3 months I've served it to company 3 times, and have made it for my family 5 times. My family likes it, and I end up eating all the leftovers, which makes me extra happy.
2 large carrots, chopped
1 large onion, chopped
4 large potatoes, chopped
5 garlic cloves, minced
1 cup of frozen peas
1 can of stewed tomatoes
1 can coconut milk
2 tablespoons brown sugar
1 cup dried green lentils
4 cups liquid, as in water or stock
4 teaspoons flavored bouillon, as in chicken or veggie
2 heaping tablespoons Yellow Curry seasoning
2 tablespoons olive oil
Saute onion and garlic in olive oil until soft.
Throw in liquid, bouillon, curry seasoning, coconut milk, sugar, and lentils.
Stir it all up, then throw in chopped veggies and stewed tomatoes. Stir some more.
Bring to a rolling boil then let simmer for 45 minutes, until lentils and taters are soft. Serve over brown or jasmine rice.
